I combined several recipes to come up with the perfect white chicken enchilada recipe. It’s a great make-ahead dish to bring to a friend or family member, is awesome as leftovers, and is great to feed a crowd. Also, it’s toddler and baby approved! I honestly think they might be better made the night before or in the morning and served later that day/night so they have time to sit and solidify with all the sauce/yumminess!
Ingredients
- 8 flour tortillas (I use the Mission brand, Soft Taco size)
- 3 chicken breasts, cooked and shredded
- 1/2 cup sour cream
- 2 cans (4oz) diced green chiles
- 2 cups shredded cheese ( I typically use the Mexican blend)
- 1/2 white onion, diced
- 4 tbs butter
- 4 tbs flour
- 2 cups chicken broth
- 2 tsp minced garlic
- 1 tsp salt
- 1 tsp cumin
- 1/2 cup half and half
- 4-5 green onions, chopped
- 1 jalapeño (optional)
Instructions
Preheat oven to 350 degrees. Grease a 9×13 baking dish.
Sauce:
- Melt butter and saute onions until soft.
- Stir in flour.
- Add the chicken broth.
- Add 1.5 cans of green chiles. (The other 1/2 can will be used in the enchilada mixture.)
- Add garlic, salt, and cumin.
*Let the sauce simmer on low heat, stirring occasionally while you make up the enchiladas. It will start to thicken.
Enchiladas:
- Add the shredded chicken, sour cream, 1 cup of shredded cheese, and the last 1/2 can of green chiles to a bowl and mix it up.
- Fill each tortilla with enough mixture until it looks full, but can still be rolled up.
- Roll each tortilla up and place them seam down in a greased 9×13 baking dish. You should be able to squeeze 8 tortillas in an 9×13 dish.
- Pour the sauce evenly over the tortillas and then pour the half and half on top.
- Press the enchiladas down with a spatula so they are under the sauce.
- Sprinkle with 1 cup of shredded cheese and top with chopped green onions. (Add fresh slices of jalapeños if you like it spicy!)
- Bake uncovered for 30 minutes at 350 degrees.
*Let them sit before serving so they can solidify a bit if you have time. When they are hot out of the oven they still taste great, but are a little runny. Drizzle with hot sauce if you like more heat!
