As promised, here is my go-to recipe for chocolate chip cookies. This is what I use to make ice cream sandwiches too. Bake them with semi-sweet chocolate chips, white chocolate chips, milk chocolate chips, or dark chocolate chips and they will be a crowd pleaser! Sometimes I do half white chocolate chips and half semi-sweet chocolate chips to mix it up!
Ingredients
- 1 cup butter, room temperature
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 1/2 tablespoons vanilla extract
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 1/2 cups flour
- 2 cups chocolate chips (your choice of type!)
Instructions
- Preheat oven to 300°. Grease two baking sheets with butter and set aside. I use these baking sheets and they are amazing!
- In a bowl or mixer, cream together butter and both sugars for a couple minutes.
- Add in eggs and vanilla extract and beat for 30 seconds.
- Add in salt, baking soda, baking powder and flour, mixing until the dough is formed.
- Mix in the chocolate chips.
- Form dough into balls and place on a baking sheet leaving ~2 inches between each. I typically use this cookie scoop when I bake cookies.
- Bake for 12 minutes, checking around 10 minutes to make sure they are not over-baking. If they are not fully cooked, that’s ok because they will continue to cook on the hot baking sheet.
- Pull out of the oven and allow the cookies to continue cooking on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.
Tips:
- This makes a lot of cookies so half the recipe if you don’t need a ton! You might need more than two baking sheets depending on the size you have.
- The dough freezes well if you want to save some to bake later.
- If you don’t have time to wait for the butter to become room temperature, put it in the microwave for a few seconds to soften it before mixing.
For Ice Cream Sandwiches
- Allow the cookies to fully cool before making the ice cream sandwiches.
- Turn one cookie upside down and place it on a piece of plastic wrap.
- Put a small scoop of whatever ice cream or gelato you want on top of the cookie and press down on the scoop to flatten the ice cream a little bit.
- Put the second cookie upright on top of the scoop of ice cream and press down gently.
- Wrap the ice cream sandwich in the plastic wrap and store in the freezer until you are ready to eat them.
