My mom gave me this recipe and it’s really all about the dressing! I have tweaked it and included alternate ingredient options below. This one is a staple in our house and we have it at least every other week! Quick to throw together and filling!
Salad Ingredients
- Head of iceberg lettuce (you can also mix in kale and/or romaine)
- 1 lb ground beef or ground turkey
- 1/4 cup taco seasoning
- Green onions (chopped)
- Tomatoes (diced)
- Avocado (diced)
- 1 cup shredded cheddar cheese
- Tortilla chips (optional)
- Black beans (optional, I normally don’t add)
- Corn (optional, I normally don’t add)
Dressing Ingredients
- 4 tbs sugar (sub coconut sugar)
- 1 tsp salt
- 1 tsp ground mustard
- 1 tbs poppy seeds
- 2 tbs dried minced onion
- 1/4 cup apple cider vinegar
- 1/2 cup extra virgin olive oil (sub avocado oil, vegetable oil, canola oil)
Instructions
- Brown the ground beef or turkey on the stove. Add taco seasoning and 2/3 cup water.
- While the meat is cooking, wash and chop the lettuce.
- Add the rest of the salad ingredients except the tortilla chips.
- Mix together all of the dry ingredients for the dressing in a bowl. Add the apple cider vinegar and olive oil. Whisk until combined and set aside. Re-whisk before dressing the salad, as the ingredients will separate.
- Add the browned and seasoned meat to your salad bowl. Add the dressing.
- Toss your salad and add crushed up tortilla chips on top if you want. Enjoy!
